You don’t need to give up creativity for
convenience. Here are some potential ideas that we could quickly prepare if you are tired
of the usual sandwiches
Spinach and apple salad with a little
ricotta or feta and pinenuts
Grated courgette and onion frittata –
delicious hot or cold with crusty bread and mixed leaves salad
Italian caprese salad with cherry tomatoes,
onion, celery and reduced-fat mozzarella. Season with basil, black pepper,
balsamic vinegar and a teaspoon of extra virgin olive oil
Cold salad of new potatoes (with the skin),
broad beans, green beans and a drizzle of pesto sauce
Kale, seaweed and sesame seeds on brown rice
We can even bring cooked vegetables and soups
